4-Ingredient Samoa Cookies
Soft and chewy and tastes like the real deal with only 4 ingredients.
Would you believe me if I told you these tasted like the real Samoas?
Probably not, so I guess you’ll just have to try them out for yourself.
And with only 4 ingredients, it’s hard to find an excuse not to…
Ingredients:
10 dates (pitted)
1 c unsweetened shredded coconut
1/3 c dark chocolate
½ tsp Coconut Oil
Steps:
Toast the shredded coconut on a pan in the oven at 400°F for only a couple of minutes. Careful - it burns easily!
Add dates and toasted coconut to a food processor and pulse until the mixture forms into a dough ball.
Scoop ~ 1 tbs dough and roll into flattened disks, then punch out a hole in the middle (not necessary if you don’t care about making them look like the real thing). Place in freezer to firm.
Melt the dark chocolate and coconut oil in the microwave on 30-second intervals until smooth.
Dip cookies in chocolate and/or drizzle on top. I covered the bottom in chocolate and topped it with drizzle.
Store in the fridge for up to 1 week!
