Buffalo Chicken Ranch Bowl
Who doesn't love this combo?


I was surprised that my kiddos still ate this chicken, despite being cooked in Frank’s (albeit the Aldi off-brand version). And don’t skip on the celery if you’re really going for that authentic buffalo chicken vibe!
Kid-Friendly Mod: Let them assemble! It sounds easy - and it is. Don’t over think it. I have found that when they’re able to put what they want and how much, they’re more likely to eat it. Serve with at least 1 safe food that you’re fairly confident they’ll eat to boost their bravery to try the rest of their meal.
Ingredients:
1 head romaine lettuce (shredded)
1 cucumber (diced)
1 cup grape tomatoes
1/4 cup Frank's Red Hot Sauce
1 tbsp mayo
Whole30 / Lite ranch
24 oz cauliflower rice
4 chicken breasts
Optional: green onions, celery sticks, avocado, additional seasoning
Steps:
Pro Prep Tip: You can marinate your chicken ahead of time in hot sauce and/or some ranch. I rarely think this far ahead, so you’re in good company if you skip the marinade.
Season chicken breasts as desired and/or dab some hot sauce over them. Cook @ 350F for ~20 mins on lined sheet pan. Once cooked & cooled, shred and mix with some more hot sauce and/or ranch.
Cook your cauliflower rice according to packaging (I typically buy frozen bags that can be cooked in the microwave).
Assemble your plate, first with cauliflower rice, then chicken, then all the toppings.
