Cheesy Chicken & Broccoli
Just chop, cut, and toss. Hopefully skip administering the first aid.
I cooked this as my children took bites out of each others’ arms and in between administering aid and top tier conflict resolution.
If I can do it, you can do it too.
Kid-Friendly Mod: Serve it deconstructed - with 1 piece of each ingredient. Serve with at least 1 safe food that you’re fairly confident they’ll eat to boost their bravery to try the rest of their meal. This would be a great meal to serve with rice / pasta / or mac n cheese if any of those are safe foods for your kiddos!
Ingredients:
1-1.5 lb chicken (cubed into 1” pieces, raw)
2-3 heads of broccoli
1.5 c shredded cheese of choice (I used cheddar + parm)
1 c heavy cream
1/2 c chicken broth
Salt, pepper, garlic, onion, paprika, chili flakes
Steps:
Preheat oven to 375F; prep casserole dish with non-stick spray.
Cut off the broccoli with kitchen scissors straight into that casserole dish. Its fine and saves a ton of cleanup.
Add in the chopped chicken and cheese.
In a separate bowl, mix the heavy cream + chicken broth, then pour over the mixture in the casserole dish. Stir.
Bake uncovered for 30-35 mins, stirring 2-3 times.
Kid (+ husband) friendly modification is to add pasta or rice!
