Easy No-Prep Salad
I eat this lunch most weeks because I don't have time to prep everything that goes in my mouth.
I’ll be the first to tell you that I despised salads.
Even the thought of salads used to (and still does, sometimes) trigger dry heaves and major gag reflex.
But something about crisp lettuce (I can’t stomach raw spinach), an extra crunch of edamame or tortilla strips, and a modest pile of whole grain rice/quinoa really does it for me.
And the name of my game - as you know - is don’t overcomplicate this stuff.
Find a bagged salad you like (I like the avocado or caesar varieties, especially from Costco), and use whatever toppings + dressings are included. Add protein. Add a grain.
Eat it up and move on with your day.

Minute rice/quinoa (whole grain)
Protein (mine is typically cooked chicken)

Mkay - put the rice on the salad. Put the protein on the salad.
Eat the salad.
