Protein Brownies
Soft, fluffy, and a little bit crunchy - with an extra dose of protein.
For better or worse, I am not a brownie girlie. So when I tell you that these are GOOD, you can go ahead and believe me.
Free of gluten which leaves me feeling sluggish but with an extra dose of protein because, obviously.
You can store them at any temperature you prefer. The flavor and texture profile differs based on where you store them - my husband proclaims they’re best straight out of the freezer…
I’d be thrilled if you could tell him you thought otherwise ;-)
Ingredients:
1 c creamy almond butter
2 large eggs
½ c maple syrup
¼ c unsweetened almond milk
1 tsp vanilla extract
½ c chocolate protein powder
¼ c cocoa powder
1/4 tsp sea salt
1 tsp baking powder
½ c chocolate chips + more for topping
Steps:
Mix together almond butter, eggs, maple syrup, almond milk, and vanilla.
Add protein powder, cocoa powder, salt and baking powder. If too dry, add some more milk.
Fold in chocolate chips.
Pour into a greased 8x8 pan. Top with even more choco chips if you want. Go ahead…
Bake at 350F for 25-30 mins or until toothpick comes out clean.
Let them cool completely, cut, and enjoy!
