Casseroles - a pizza one, no less - are my favorite. That last step where everything cooks in the casserole dish in the oven is prime time to get the kitchen clean so I can enjoy a hot dinner with a relatively clean kitchen.
Kid-Friendly Mod: Put the guts (I try and limit the squash in my kids’ guts) ontop of nachos, in a quesadilla, or rolled up in a taco/burrito. Serve with at least 1 safe food that you’re fairly confident they’ll eat to boost their bravery to try the rest of their meal.
Ingredients:
1 spaghetti squash
1 jar pasta sauce
1.5 c shredded cheese
Fave pizza toppings (pepperoni, peppers, jalapeno, onion)
1 lb lean ground meat (sausage, beef, turkey)
Garlic powder, Italian seasoning
Steps:
Bake spaghetti squash in oven until soft (I cut in half lengthwise, place cut side down @ 350F for ~50 mins). Once cooled, scrape insides to make “noodles”.
While squash cooks, heat olive oil in large skillet over medium heat. Cook meat until brown, add seasoning, and stir in pasta sauce.
Layer in a casserole dish: ½ spaghetti squash, ½ cooked meat, ½ cheese, then repeat.
Top with whatever pizza toppings you like.
Cook @ 350F for 15 mins or until bubbly.
